I know this is probably no big deal to most people but one of the things I want to remember about my boys is how AWESOME they are at eating green spinach salads. Ever since watching the film “Forks over Knives” this last June Adam and I have been trying to severely cut down on the amount of meat we eat at meals and replace it with fresh fruits and vegetables and whole grains. Its been a slow and grueling task trying to switch our eating habits (you wouldn’t believe how many recipes call for meat!) but if there is one success we’ve had, its with salads. I can give my kids a BIG ol’ plate of greens or vegetables now and they will gobble them up without hesitation or complaining. Its simply wonderful. Dawson we have to be a little more tricky with as he prefers “fruit” salads (where we put blueberries, blackberries, or strawberries on his spinach with homemade poppyseed dressing) but he still will eat his salads most of the time without complaint. Its really been a wonderful change to make “salad” our main dish instead of meat and we are all feeling a lot more healthy because of the change. Here’s to healthy eating! 🙂
